Sohomare Tokubetsu Kimoto Sake. Kimoto Style Sake. Kimoto Method.- Tokubetsu means special in Japanese, but in sake lingo, it means that the rice polish ratio must be 60% or more, or there must be something else special in the brewing process. This meets the criteria because the polish ratio is 60%, and it uses special grade A Yamada Nishiki. A soulful, powerful sake with great balance with both ample acidity and umami.
