The most important thing for me in wine-making is to make the wine using the most natural method, using grapes grown in the most organic way. I want to grow robust grapes by bringing out their innate immunity and strength by adding as little human elements or chemical help as possible.

CHATEAU MERCIAN

Chateâu Merican, founded in 1887, was the first privately-owned winery in Japan. It is now part of Kirin Holdings family, one of the biggest beverage companies in Japan. Yes, yes, yes, the natural inclination is to go for small, boutique businesses, but do yourself a huge favor and do NOT dismiss Mercian as some boring behemoth, because they've done fascinating work.

KATSUNUMA WINERY

Yamanashi Prefecture

Katsunuma Winery dates back to 1937 and has dedicated themselves to Koshu wines; in fact, every one of their white wines are made with Koshu grapes. They could be called the Koshu Whisperer: they really know how to work with Koshu grapes.

KISVIN WINERY

Yamanashi Prefecture

Originally a table-grape producing farm, Kisvin CEO Ogihara slowly started planting wine grapes when he took over his family business in 2002. He started a wine research group, Team Kisvin, to study wine grape farming in 2005, and in 2013 began making wine and founded Kisvin Winery.
