Junmai

Categorically, a junmai doesn't require a specific rice milling percentage. Junmai means "pure rice." It's the quintessential form of sake, brewed from sake's 4 core ingredients. Any sake with junmai in its name bears the credit of not holding any distilled alcohol additives. While it's hard to over-generalize, you can expect sakes in this category to be more rich and full bodied with a subtle acidity.

Kimoto Method.- Tokubetsu means special in Japanese, but in sake lingo, it means that the rice polish ratio must be 60% or more, or there must be something else special in the brewing process. This meets the criteria because the polish ratio is 60%, and it uses special grade A Yamada Nishiki. A soulful, powerful sake with great balance with both ample acidity and umami.
