Koshi no Kanbai Sai Sake. The first new product introduced by Koshi no Kanbai since 1971, Sai takes a different approach from their usual line up. Using Gohyakumangoku and Yamada-Nishiki polished to 55%, and a low-temperature again technique, Koshi no Kanabi succeeds in creating a light understated sake that a newbie can easily enjoy without sacrificing the distinct rice flavor. Sai means smooth and clean, and that is exactly what this is. Best Ginjo Sake!

A delight, with light aromas of steamed rice, cream, marshmallow, white peach, lychee, white lily, spearmint, cashew nuts, cotton candy—and that's just the beginning. A round, full palate with flavors of spearmint and sudachi, a Japanese citrus, followed by a crisp, cool finish. Like a beautiful, intricate spider web, it's light as air, but deadly in its deliciousness.

HOW TO ENJOY

PAIRING

Since sake that goes with any food is one of Koshi no Kanabai Brewery's boasting points, this one goes with anything, but if you're looking for suggestions: Especially wonderful with umami-rich seafoods like scallops and squid, yakitori and tempura are also great with Sai.

SERVING

Any temperature is a good temperature for Sai, but 50-60°F show its assets to the fullest. Enjoy in a wine glass or ochoko.

Ishimoto Brewery is also known as Koshi no Kanbai, meaning Winter Plum of Koshino (an old name for the Niigata region). Named after the beautiful, hearty winter plum that is a frequent subject of art and poetry with its delicate flowers blooming in the cold of January and February on snow-laden branches, the tree is a symbol of both beauty and perseverance. Koshi no Kanbai has braved numerous dire eras such as rice shortages during the two wars in the Showa Period, but throughout, they made a point of never lowering their standards, always choosing quality over quantity.
