Hailing from the highly competitive Yamagata prefecture Mitobe sake brewery has been devoted to quality Junmai sake production for five generations. A stout devotion traditional production methods and the utilization of mineral rich water from the Uwa mountains give the Yamagata Masamune brand its characteristic swordlike sharp flavor and expression. In 2004 Mitobe sake brewery began growing their owns sake rice in Yamagata, furthering their dedication to the region and quality brewing ingredients.
