ABOUT THIS BOTTLE

Daishichi Minowamon

Minowamon is named after the gate to Nihonmatsu Castle in Nihonmatsu, where Daishichi Brewing Company is located. While the castle was destroyed during the Boshin War (1868-1869, also called the Japanese Revolution or Civil War, where the ruling Tokugawa Shogunate and fought and lost to those seeking to return power to the Imperial Court.), the Minowa gate was reerected in 1982 as a symbol of nobility and courage. Created in 1995, the Minowamon was the first Junmai Daiginjo brewed in the traditional kimoto method, using Daishichi's own super-flat rice-polishing technique which totally eliminates any undesirable parts of the rice. While this sake is a result of human technology and progress, one sip will make you forget all that and simply marvel at the great balance and structure.

HOW TO ENJOY

PAIRING

Great with delicate, sweet seafood like lobster, oysters, salt-grilled river fish, boiled king crab, mousse of white fish, flounder; if doing sushi or sashimi, think uni, ikura, or chutoro; for vegetables, think white asparagus in butter sauce. When served chilled, delightful with roasted duck as well.

SERVING

Best chilled to 10–15°C. The crisp, clean taste of Minowamon makes it the perfect accompaniment for kaiseki cuisine.
