Hakkaisan "Kongoshin" Winter

Hakkaisan Brewery

Bottled each winter in a striking black flask, Hakkaisan “Kongoshin” Winter Black is a limited-edition Junmai Daiginjo from Niigata’s revered Hakkaisan Brewery. Crafted from top-tier Yamada Nishiki (and sometimes Gohyakuman-goku), polished to 40%, it's aged for two years at sub-zero temperatures (–3 °C) in snow-cooled cellars. This rare brew showcases pristine clarity and refined depth: silken with hints of orchard fruit, subtle florals, and restrained minerality. A true embodiment of “firm and stable mind” — bold, elegant, and timeless.

HOW TO ENJOY

PAIRING

Pair this regal sake with delicate winter fare—think buttery grilled anago, white fish mousse, or salmon simmered in sake-kasu. Its clean, dry palate elevates light seafood and seasonal vegetables, bringing out each dish’s subtle nuances.

SERVING

Serve slightly chilled (50–55 °F) to preserve its crisp structure, or warm gently (~95 °F) for a richer, comforting expression. A slender wine glass or sake cup will accentuate its elegant aroma and silky texture—ideal for savoring slowly.
