MATSUI SAKE BREWERY

From the quiet banks of Kyoto’s Kamo River comes a sake shaped by nearly three centuries of devotion. Crafted by Matsui Sake Brewery, a historic kura founded in 1726, Kagura represents the house’s most expressive and modern vision, where tradition is not preserved, but reinterpreted. Now led by 15th generation brewer Jiemon Matsui, the brewery remains intentionally small, favoring precision and human touch over scale. Each batch is brewed with meticulous control, balancing centuries old techniques with modern innovation, including temperature management refined to the finest degree. The result is sake that feels alive, textured, nuanced, and deeply personal. Kagura is not a conventional line. It is Matsui’s pursuit of emotion in sake, crafted using Kyoto grown rice such as Iwai, known for its softness and clarity, and brewed to express both purity and depth. In “Midnight Blue,” this philosophy reaches its most atmospheric form: an unfiltered, unpasteurized, undiluted sake that captures the raw, unguarded character of the brew itself.
