SOHOMARE "KARAKUCHI"
A bracingly delicious junmai that doesn't waffle around. The Yamada-Nishiki is polished down to 60%, and the numminess of the rice core really brings a breadth to the flavor. It has a fairly restrained, clean, fresh aroma, a texture that clings to the tongue, and a finish with a mineral bite. Warmed, the yummy savory touch of umami is highlighted. Happiness is a warm karakuchi.
OTOKOYAMA TOKUBETSU JUNMAI
A classic example of a great, dry, junmai-shu. This sake is characterized by its sharpness and its subtle sourness; a delightful interplay of dryness and acidity. Earthy and sweet aromatic nose. Because of its compatibility with sushi and sashimi, it's known as a sake that matches well with Japanese food in general.

PAIRING
Sohomare "Karakuchi" - This sake holds up to any variety of dishes. Its dryness makes it ideal with sushi, but also pairs well with cooked fish and poultry.
Otokoyama Tokubetsu Junmai - Recommended with salmon, toro sashimi, sushi, ceviche, ramen, especially soy-based broth and tempura.
