ABOUT THE BREWERY
Kokuryu Shuzo - 黑龍酒造
Sake made with soft water often captures subtle, multi-layered nuances, especially at the ginjo level, that contrast with the crisp, dry profiles of hard water sakes. Kokuryu Brewery, renowned for its use of the pure subterranean flow of the Kuzuryugawa (Nine-Headed Dragon River), exemplifies this finesse. Founded in 1804 near Eihei-ji Temple by Nizaemon Ishidaya, Kokuryu has mastered the art of balancing deep, rich flavors with remarkable clarity, avoiding the muddiness that can mar complex sakes. The result is a harmonious expression of the sake-making craft.
