Koshi no Kanbai "Cho Tokusen"
The top of the top. The best of the best. Often confessed by sake critics in Japan that its flavors are impossible to describe. This is at the pinnacle of Koshi no Kanbai's craftsmanship. Using premium grade Yamada-Nishiki polished down to 30%, Koshi no Kanbai ages this sake at 33.8°F for about two years to draw out its umami and depth to the limit. The result is a "dignified fragrance," "delicately flavored," "astonishingly subtle," "delicious flavor." (Call us the Zagat of the sake world.)
HOW TO ENJOY
PAIRING
Enhances any food that you pair it with. Relax, and enjoy. A bottle of “Chotokusen” is an event in itself. Equally at home with contemporary cuisine or traditional Japanese classics, it enhances the flavor of any food it accompanies.
SERVING
Room temperature is extremely flattering to the lingering flavor profile, but it is also lovely chilled. Serve cool at around 10–15°C. Enjoy in a tulip wine glass.

ISHIMOTO BREWERY
Ishimoto Brewery is also known as Koshi no Kanbai, meaning Winter Plum of Koshino (an old name for the Niigata region). Named after the beautiful, hearty winter plum that is a frequent subject of art and poetry with its delicate flowers blooming in the cold of January and February on snow-laden branches, the tree is a symbol of both beauty and perseverance. Koshi no Kanbai has braved numerous dire eras such as rice shortages during the two wars in the Showa Period, but throughout, they made a point of never lowering their standards, always choosing quality over quantity.
