Dassai 23
To craft the ultimate Junmai Daiginjo sake Dassai 23, Yamada-Nishiki rice is first polished down to 23%. It's polished 24 hours a day for 7 days straight—that's 168 hours spent on polishing! This is said to be the highest degree of polish in Japan, but they don't rest their laurels on this number alone; instead, they've taken their seat on the throne of all Junmai Daiginjos with Dassai 23's exquisite flavor. This sake, along with Dassai Beyond, was the sake Prime Minister Abe chose to present to President Obama during his trip to Japan in 2014.

This Dassai pairs well with sushi, sashimi, vegetable dishes, shellfish, lobster roll and seafood dishes.
