Houou Biden "Sake Mirai" is a Junmai Daiginjo brewed with Yamagata's Sake Mirai rice, developed by Takagi Shuzo of Juyondai after 18 years of trials. Known for its clean, deep flavor with fewer off-flavors, Houou Biden uses the traditional Kimoto method and ages the sake for 6 months to enhance its richness. The result is a refreshing aroma of fresh greenery, a creamy texture, and a gentle, lingering finish.

Houou Biden Brewery, Kobayashi Shuzo, was founded in 1872 (the 5th year of the Meiji era) in Koyama City, Tochigi Prefecture. Once known as Mitamura Village, this area is blessed with vast, beautiful rice fields and pure spring water from the Nikko Mountains. It is from this rich land that Houou Biden was born.
