Bottle 1 - Shichida "Junmai"

Tenzan Brewery's flagship Junmai blends two types of sake rice to produce their signature flavor.

Bottle 2 - Sohomare "Junmai Ginjo"

An incredibly local sake, this is made with Gohyakumangoku rice harvested within five miles of the brewery. Gohyakumankoku result in a more stoic, stiffer sake, so the toji made an effort to round this out by bringing out the sweetness. This is a delicate, creamy expression of a junmai ginjo. Using three different yeasts yields a subtle fruity aroma.

ABOUT THIS BOTTLE

SHICHIDA "JUNMAI"

A perfect example of the classic, umami-filled "Shichida" style sake. Two types of rice varieties are blended with their proprietary yeast to create this sake that is complex and full of flavor. A kick of green apple tempered by a drizzle of golden honey, be ready to take your off to the sweet and acid balance. Medium dry sake.

SOHOMARE "JUNMAI GINJO"

Delicate, nose of green banana, wild flowers, muscadine grapes, and a hint of pear drops. Robust, elegant, rich flavor of ripe melon, plantain, pear and white flower, slightly viscous texture rolls pleasantly on the tongue. Cool, vibrant finish with a gentle minerality.

HOW TO ENJOY

PAIRING

Shichida "Junmai" - Pairs well with most foods; apple pie, grilled chicken - it's quite versatile! 

Sohomare "Junmai Ginjo" - The lovely lightness of this pairs well with simple, crisp spring vegetables like asparagus, artichokes, or peas; also goes well with white fish sashimi, scallops, soba or simple pasta dishes.

SERVING

Shichida "Junmai" - Great at all temperatures, from chilled to warm!

 

 

Sohomare "Junmai Ginjo" - Enjoy slightly chilled, a few degrees below room temperature, in a glass of your choice.
