This top-quality junmai daiginjo has a perfect mixture of elegant apple and sherry aromas. The rich and sophisticated balance of sweetness and acidity is something you can really sink your teeth into.

Bottle 2 - Koshi no Kanbai "Tokusen"

Light, clean, with a delicate fragrance. The vibe is very "white, freshly laundered Gap basic T-shirt with a spritz of CK one in the mid 90's." So ultra clean, it has a flavored-water feel. A definitive Koshi no Kanbai style, often emulated, never duplicated.

ABOUT THIS BOTTLE

YAEGAKI DAIGINJO MU BLACK LABEL

Pale honey tint, lots of umami aromas that include Chinese five-spice, pickled plum, and rice. Long, complex smooth finish of lime-spritzed honeydew melon and white tea.

KOSHI NO KANBAI "TOKUSEN"

Dynamic nose with steamed rice, white peach, muscat grapes, melon, pear, rose petal, green apple, grapefruit, mineral, watercress, cypress. Soft and smooth texture, flavors of peach and watercress and elements of cooked pear and grapefruit; however, the second half of the palate expands into a sophisticated, rice-laden fullness, with a disappearing "phantom finish" end. Is this what ghosting feels like in the sake world? If so, hit me one more time.

PAIRING

Yaegaki Daiginjo Mu Black Label - By itself or together with meals with lighter flavor such as seafood and salad.

Koshi no Kanbai "Tokusen" - Pairs with virtually any Japanese dishes. Also try it with grilled chicken, scallop, somen noodles, truffle fries, chives dumplings, and even soup dumplings.

Yaegaki Daiginjo Mu Black Label - Best served chilled in a wine glass.

Koshi no Kanbai "Tokusen" - Often enjoyed at 55-77°F, but enjoy the great delicacy and finesse highlighted when warmed.
